Recipe for some delicious custard purees, without sugar, without milk, without gluten and that will drive gourmets crazy

– 4 egg whites
– 60 g of fructose
– One tablespoon of vanilla extract powder
– 100 g of almond flour
– ½ cup of dairy-free cream
PREPARATION

– Preheat the oven to 180°
– Start by beating the egg whites well.
– Then add the fructose and vanilla extract powder and continue beating for a few moments, until the mixture is firm.
– Then add the flour and cream and continue mixing until you obtain a homogeneous dough.
– On a baking sheet covered with parchment paper, and with a tablespoon, place small mounds of dough and flatten them into small disks.
– Place in the oven for 6 to 7 minutes.
– After cooking, remove the discs with a spatula, roll them and let them harden.
– Garnish the cigars with pastry cream using a pastry bag or simply a large syringe.

Other tips: With pastry cream you can fill various cakes such as éclairs, millefeuille or even rolled cake.
