My Italian grandma taught me this method, and I’ve never stopped using it!

2 pounds of baby potatoes, halved or quartered
1/4 cup olive oil
1 tablespoon Italian seasoning
3 cloves garlic, minced
1/4 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions
1. Place the halved or quartered baby potatoes in your slow cooker.
2. In a small bowl, mix the olive oil, Italian seasoning, minced garlic, Parmesan cheese, salt, and pepper.
3. Pour the olive oil mixture over the potatoes, and toss to coat them evenly.
4. Cover the slow cooker and cook on low for 4-5 hours, or until the potatoes are tender and cooked through.
5. Give the potatoes a good stir before serving, and sprinkle with freshly chopped parsley for a pop of color and added flavor.
Variations & Tips
If you have picky eaters at home, you can adjust the seasonings to your family’s tastes. For a milder flavor, reduce the garlic or use garlic powder instead. You can also add other vegetables like bell peppers, onions, or carrots to the slow cooker for more variety. For a cheesy twist, sprinkle some shredded mozzarella on top during the last 30 minutes of cooking. Enjoy!
