My grandma from Italy showed me this technique, and I’ve been using it ever since!

2 pounds of small potatoes, cut in half or in quarters.
1/4 cup of olive oil
1 tablespoon of mixed herbs commonly used in Italian cuisine.
3 pieces of minced garlic
1/4 cup of shredded Parmesan cheese
Add salt and pepper according to your preference.
Fresh parsley, finely chopped (for decoration)
Instructions

1. Put the cut baby potatoes in your slow cooker.
In a little bowl, combine olive oil, Italian herbs, chopped garlic, Parmesan cheese, salt, and pepper.
3. Drizzle the olive oil mixture over the potatoes and mix well to cover them completely.
4. Put the lid on the slow cooker and cook on low heat for 4-5 hours, or until the potatoes are soft and fully cooked.
Before serving, mix the potatoes well and add some freshly chopped parsley on top for a touch of color and extra taste.

Different Types and Advice
If your family members are selective about food, you can change the seasonings to match their preferences. To make the taste less strong, use less garlic or switch to garlic powder. You can also put other vegetables such as colorful peppers, onions, or carrots in the slow cooker to have more options. For a fun variation, add some grated mozzarella on top in the final 30 minutes of baking. Have fun!
