BBQ Chicken Sandwich

Soy sauce – You can use low-sodium soy sauce or coconut animos, if you’d like.

BBQ sauce – Choose sweet or spicy or try a homemade version!

Olive oil – You can also use vegetable oil as well.

Buns – The bigger the buns, the more shredded chicken it’ll hold. You can also try homemade hamburger buns, if you have the time!

Toppings – Think shredded lettuce, tomatoes, cheddar cheese.

How to make buttermilk

If you don’t have any buttermilk in the fridge, don’t fret. You can easily make your own homemade buttermilk without any issues. All you need to do is add 1 tablespoon of vinegar or lemon/lime juice to every cup of milk.

  • 8-10 uncooked strips of chicken, about 2 pounds
  • 5 cups of buttermilk
  • 2 teaspoons of salt
  • 1 teaspoon of ground black pepper
  • 1 teaspoon of cayenne pepper powder
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 teaspoon of dried parsley
  • 6 garlic cloves, diced
  • ¼ cup of sugar
  • 2 tablespoons of Worcestershire sauce
  • 1 tablespoon of soy sauce
  • ¼ – ½ cup of barbecue sauce
  • 1 tablespoon of olive oil (or vegetable oil)
  • 6 burger buns
  • ½ cup of shredded lettuce
  • 2 diced tomatoes
  • sliced cheddar cheese (or your choice of cheese)
  • condiments of choice

    Instructions

    1. Start by mixing together the Worcestershire sauce, soy sauce and sugar together in a bowl and stir until the sugar has dissolved.

    2. Add the mixture to the buttermilk as well as the salt, ground black pepper, cayenne pepper powder, garlic powder, onion powder, dried parsley and garlic cloves.

    3. Add the chicken strips to the buttermilk mixture.

    4. Marinade the chicken for two hours in the fridge.

    5. Heat the pan over medium heat and drizzle in the olive oil.

    6. Remove the chicken from the marinade and cook them in the pan for three to four minutes on each side until they form a skin and remove them from the pan.

    7. Let them cool completely before shredding them by hand or with a fork.

    8. Stir in your barbecue sauce of choice.

    9. To assemble the sandwiches, spread your favorite condiments over the bun, layer the tomatoes, cheese, shredded chicken, lettuce and top bun.

    10.  Serve immediately with French fries, potato salad or chips
